From the moment our 75-year-old Pamid vines begin to bud in spring until the final bottle is sealed, every step happens under our watchful eye. This level of control is impossible when sourcing grapes from multiple locations.

Every step in our winemaking process prioritizes quality over quantity, tradition over technology, and craftsmanship over mass production.

Hand Harvesting

Every grape is hand-picked at the perfect moment of ripeness. Our experienced harvesters select only the finest clusters, ensuring that damaged or unripe grapes never enter our wine.

Natural Fermentation

We rely on native yeasts that live naturally on our grape skins and in our cellar. This traditional approach creates more complex flavors and authentic terroir expression.

No commercial yeasts or additives

Temperature Control

Fermentation temperatures are carefully monitored and controlled to preserve the delicate aromatics and flavors that make Pamid so distinctive and complex.

Optimal range: 24-28°C for red wine character

Extended Aging

Our wines age slowly in carefully selected oak barrels, allowing the complex flavors to develop and integrate over months of patient maturation.

Minimum 12 months in French oak

Minimal Intervention

We believe great wine makes itself. Our role is to guide the process gently, allowing the natural character of our 75-year-old vines to shine through.

No fining agents or excessive filtration

Only the finest barrels make it into our final blend. Each barrel is tasted and evaluated multiple times before earning its place in an Estate-42 bottle.
